Benefits include: GRAS status (generally recognized as safe), well-characterized genetics and metabolism, extensive genetic tools, ability to perform post-translational modifications (unlike bacteria), secretion capability, robust growth on inexpensive substrates, tolerance to industrial conditions (low pH, ethanol), and long history of safe use. Applications span: ethanol production (biofuels, beverages), recombinant protein production (insulin, hepatitis B vaccine), production of vitamins and flavors, and research model.
